So, here's the plan for this week: I'm currently simmering some red beans with jalapenos and bacon. Tonight, I'll make a chopped Southwest salad, with some of the beans, plus cut-up leftover Chicken Fried Steak, lettuce, tomato, onion, homemade salsa, red & green peppers and maybe some corn and crunched tortilla chips. Tomorrow, I'll serve the rest of the beans with BBQ chicken. The leftover BBQ chicken will go into a Greek salad with feta, kalamata olives, onion, cucumber, tomatoes and lettuce on Thursday. Friday I plan to make potato salad and grilled pork chops ~ leftover potato salad with go with Morningside Sandwiches (BLT with over-easy egg on top) on Saturday. I'll make some coleslaw to go with the BBQ chicken and pork chops too ~ and there's a huge bowl of fresh cantaloupe cut up (I actually picked my first cantaloupe from the vine yesterday!). ~ Yesterday, I tossed together a batch of fresh apple nut butterscotch bars too. So, it all sounds tasty ~ yet inexpensive. (Recipes for jalapeno beans and apple nut butterscotch bars available in my eBay store)
Wonderful dishes. How nice to grow your own cantaloupes. The apple nut butterscotch bars sounds delicious.
